What's AVPN?
The VPN Association was founded in 1984, supported by the Chamber of Commerce, Handicrats & Industry. Old Neapolitan pizza masters, given the spreading of fast-food chains and the large use - sometimes inappropriate- of the denomination "Original Neapolitan Pizza", decided to found an association based on a protocol in order to protect and increase the value of the pizzas produced and processed according to the old Neapolitan traditions and customs.
Our Story
AVPN Certified - Beintema's
The idea of AVPN certification submission occurred after the art of Neapolitan pizza making was selected as an Intangible Cultural Heritage by UNESCO. Since Beintema's establishment, we have always been applying the Neapolitan pizza making methods to produce our pizza. This made us wonder, "why haven't we made it official?"
Long story short, it became time for the evaluation process by the AVPN judges from Napoli, Italia, which is the origin city of pizza. The people of Napoli are the ones who are responsible for introducing pizza to the world, after which it became one of the most popular foods on the planet. The judges team's appraisal was done in great detail: they used a timer in every process, and even the sound of newly baked pizza crusts was observed and recorded.
By good fortune, the evaluation process went swimmingly and it was confirmed that our standard process is the correct way of making Neapolitan pizza. The judges also appreciated Beintema's as the first and only pizzeria in Indonesia that perfectly conserves the standard process of making Neapolitan pizza, and one of the fewer than 1000 pizzerias in the world which have received this recognition.
The interesting part is that Beintema's is one of the few pizzerias that dares to use sourdough (natural yeast). Beintema's prefers to use sourdough because other than its unique taste, the longer fermentation process makes our pizza more digestible. Of course this preference costs us a little more inconvenience than regular dough. Especially because sourdough is prone to be affected by weather changes rather easily, even more in Indonesia with a tropical climate than in Europe with a colder average climate.
